It&#039;s wiley so beware.<\/figcaption><\/figure><br \/>\nI don\u2019t like cilantro.<br \/>\nI think I\u2019ve made serious progress in not saying I loathe cilantro or I find cilantro disgusting. I\u2019d prefer not to eat it but I\u2019ve learned to tolerate it since it appears in so many dishes I like.<br \/>\nSo I found a recent New York Times article headlined \u201c<a href=\"http:\/\/www.nytimes.com\/2010\/04\/14\/dining\/14curious.html\" target=\"_blank\" rel=\"noopener noreferrer\">Cilantro haters, it\u2019s not your fault<\/a>\u201d interesting for two reasons:<br \/>\nFirst, who doesn\u2019t like      having their opinion affirmed? Reading that:<\/p>\n<blockquote><p>&#8220;The authoritative Oxford Companion to Food notes that the word  \u201ccoriander\u201d is said to derive from the Greek word for <a title=\"More articles about bedbugs.\" href=\"http:\/\/topics.nytimes.com\/top\/reference\/timestopics\/subjects\/b\/bedbugs\/index.html?inline=nyt-classifier\">bedbug<\/a>, that cilantro aroma  \u201chas been compared with the smell of bug-infested bedclothes\u201d and that  \u201cEuropeans often have difficulty in overcoming their initial aversion to  this smell.\u201d<\/p><\/blockquote>\n<p>means I might be      in the minority here but I\u2019m not alone.<br \/>\nSecond, the article explains why      some people might dislike cilantro, and specifically think it doesn\u2019t      taste like food.<\/p>\n<blockquote><p>When we taste a food, the brain searches its memory to find a pattern  from past experience that the flavor belongs to. Then it uses that  pattern to create a perception of flavor, including an evaluation of its  desirability.<br \/>\nIf the flavor doesn\u2019t fit a familiar food  experience, and instead fits into a pattern that involves chemical  cleaning agents and dirt, or crawly insects, then the brain highlights  the mismatch and the potential threat to our safety. We react strongly  and throw the offending ingredient on the floor where it belongs.<\/p><\/blockquote>\n<p>Many people, even those who like it, describe cilantro as having a soapy taste.\u00a0 Understandably this would be offputting for some, but in others, they recognize that taste and still enjoy cilantro. That&#8217;s not unlike people who enjoy a wine they&#8217;d describe with terms like medicinal, old saddle or wet dog.<br \/>\nHere\u2019s the fit for a blog about evolution: a neuroscientist quoted in the story says we can retrain our brains to have different associations with a flavor.<br \/>\nThe first time I encountered cilantro, I thought the Indian food I was eating had picked up the taste of the tin packaging it was in. I tried to eat away from the edges, thinking that&#8217;s where the problem started, but couldn\u2019t escape it.<br \/>\nI\u2019ve since tolerated cilantro in guacamole and in Thai soups and though it\u2019s not my favorite, I like those dishes enough to cope. As a result, I think I\u2019m teaching my brain that it\u2019s not tin but instead it\u2019s associated with yummy things.<br \/>\nI blogged a while back about <a href=\"https:\/\/staging.communify.me\/newvinegrowing\/2010\/02\/12\/are-you-willing-to-give-things-you-hate-a-second-chance\/\" target=\"_blank\" rel=\"noopener noreferrer\">retasting foods I thought I didn\u2019t like<\/a>. The point of that piece was that tastes can change as we age.<br \/>\nThis recent Times article was intriguing to me because it suggests it\u2019s not just trial and error but that we can teach our mouths to like something.<br \/>\nDoes that mean I need to mount a reprogramming campaign to develop a taste for oranges, too?<br \/>\n<strong>Have you ever learned to like something?
